Strawberry Dessert Tortilla

Ingredients
- 4 ounces (125 g) light cream cheese, softened
- 1 tsp. (5 mL) icing sugar
- 1 cup (250 mL) low fat strawberry yogurt
- 1/2 tsp. (2 mL) lemon juice
- 4 8 inch (20 cm) flour tortillas
- 2 tsp (10 ml) butter, melted
- 3 cups (1 L) strawberries, sliced
- icing sugar
Description
- In medium bowl, beat cream cheese with icing sugar until fluffy. Beat in yogurt and lemon juice, set aside.
- Heat large heavy fry pan over medium heat. Lightly brush each side of tortillas with butter. Heat tortilla in fry pan for 45 – 60 seconds per side or until lightly browned.
- Spoon 1/4 cup (50 mL) of cream cheese mixture and ½ cup (125 mL) of strawberries down the center of each tortilla. Roll up, place seam side down onto serving dishes. Spoon remaining strawberries over tortilla, dust with icing sugar.
