Strawberries & Chocolate Cookie Fool

Ingredients
- 2 cups (500 mL) whole strawberries
- 1/4 cup (50 mL) sugar
- 2 tbsp (30 mL) water
- 1 cup (250 mL) Whipping Cream
- 8 chocolate wafer cookies, crushed
- 1 tsp (5 mL) vanilla
- 8 store bought chocolate cups
- Whole strawberries & crushed cookies for garnish
Description
- In blender or food processor, add strawberries, sugar and water; puree until smooth. Strain through sieve to remove seeds. Set aside. Makes about 1 cup.
- In medium bowl, whip cream until soft peaks form; fold in berry puree, cookies and vanilla leaving some streaks of fruit through cream. Spoon or pipe cream mixture into chocolate cups; refrigerate until serving time. Can be made up to 4 hours ahead. Garnish with crushed cookies and strawberries at serving time.
