Strawberry Dessert Tortilla

Ingredients

  • 4 ounces (125 g) light cream cheese, softened
  • 1 tsp. (5 mL) icing sugar
  • 1 cup (250 mL) low fat strawberry yogurt
  • 1/2 tsp. (2 mL) lemon juice
  • 4 8 inch (20 cm) flour tortillas
  • 2 tsp (10 ml) butter, melted
  • 3 cups (1 L) strawberries, sliced
  • icing sugar

Description

  1. In medium bowl, beat cream cheese with icing sugar until fluffy. Beat in yogurt and lemon juice, set aside.
  2. Heat large heavy fry pan over medium heat. Lightly brush each side of tortillas with butter. Heat tortilla in fry pan for 45 – 60 seconds per side or until lightly browned.
  3. Spoon 1/4 cup (50 mL) of cream cheese mixture and ½ cup (125 mL) of strawberries down the center of each tortilla. Roll up, place seam side down onto serving dishes. Spoon remaining strawberries over tortilla, dust with icing sugar.
