In blender or food processor, add strawberries, sugar and water; puree until smooth. Strain through sieve to remove seeds. Set aside. Makes about 1 cup.
In medium bowl, whip cream until soft peaks form; fold in berry puree, cookies and vanilla leaving some streaks of fruit through cream. Spoon or pipe cream mixture into chocolate cups; refrigerate until serving time. Can be made up to 4 hours ahead. Garnish with crushed cookies and strawberries at serving time.
